A tasting theatre concept, brought to you by Sofood!

With all sessions being free entry, our Tasting Theatre follows in the footsteps of the old saying “The proof of the pudding is in the eating”. Therefore, unlike a traditional demo tent the focus will actually be on the tasting! We’ll be running through the creation stages of a range of easily prepared meals, perfect for anything from a small family meal to a full blown Summer garden party. Alongside getting to taste the finished dishes, you’ll receive an all-important recipe card to recreate at home. Want more? We also have our creations on sale to enjoy your own Picnic in the Park this afternoon, featuring a one off Telfood Feastival special with our take on the classic Shropshire Fidget Pie!

Chef Idris Hughes started his kitchen career in hotels, gaining experience of bulk cooking in large numbers from weddings, conferences and buffets, to high quality individually cooked dishes. From there he entered the independent pub & restaurant trade, cooking homemade food and helping to grow small businesses alongside their weekly turn over. He has gained overseas experience in European cooking before becoming an executive chef over both a hotel and busy restaurant, winning AA Rosettes for numerous businesses and has now joined the management team at Sofood! to bring his knowledge directly to your table!

11.00: SOFOOD!’S BIT ON THE SIDE - IDRIS HUGHES, SOFOOD!

Easy to make cupboard essentials to make your party a success.
Meeting the demand for recent food trends and healthy diets, these essentials are tried and tested on local restaurant menus. Featuring a homemade hummus, a failsafe guacamole, a properly made pesto, and adding a taste of spice with a North African harissa paste.

12.00: CHICKEN FROM THE ORCHARD - PETER ROBERTS, THE ORCHARD

A trio of chicken dishes from a duo of Orchard Chefs.
Local chef Peter Roberts trained at Radbrook and honed his skill in both fine dining and banqueting in hotels and businesses across the region. He first set up Call in The Caterers offering wedding and corporate catering services in 2005. Peter, a member of the craft guild of chefs has mentored a number of young chefs through to the finals of Staffordshire master-chef and is passionate about developing the skills of future young chefs. The Orchard opened two years ago on Newport High Street and offers menus which are a celebration of seasonal produce offering traditional British and continental flavours all cooked to order using local ingredients. Peter will be joined on stage by fellow chef Richard Pinchin; also a locally trained head chef and who assists Peter at The Orchard. www.Orchard-Dining.co.uk

13.00: PICNIC IN THE PARK, IDRIS HUGHES, SOFOOD!

Flaunting our local produce and suppliers for a day out in The Park.
Have you ever wondered how they make pork pie pastry so crispy? Find out more about this versatile & easy to work with pastry whilst tasting our own take on the classic Shropshire Fidget Pie. The session also includes other Ploughman’s classics, and features an introduction to Telford based artisan producer Dukeshill Ham, who’s commitment to quality led to being awarded the ultimate accolade – a Royal Warrant to supply hams to HM The Queen.

14:15: CHEESE & DRINKS PAIRINGS - MARTIN MOYDEN, MOYDENS HANDMADE CHEESE

Pairing Shropshire’s finest artisan cheeses with local drinks, including some unusual matches!
Local cheese producer Martin established his business in 2005, stemming from a passion for quality, attention to detail and a lust for perfection. Using local Shropshire milk an ever increasing range of cheeses have been developed and named after well-known Shropshire towns and landmarks, drawing from local history each cheese has a story to tell.

15:15: DESSERTS & DIGESTIFS, IDRIS HUGHES, SOFOOD!

Showcasing a number of desserts with an alcoholic twist!
We’ll be utilising Telford based Flower & White’s Merangz to create a boozy fruit Eton Mess and an upside down Lemon Meringue Pie, whilst also featuring our own take on a Cherry Bakewell.
